We present 3 μm spectroscopy of three carbon-rich proto-planetary nebulae. Spectroscopy with high spatial resolution afforded by the Subaru adaptive optics system revealed clear spatial variation of hydrocarbon emission in IRAS 22272+5435. The intensity of the aliphatic hydrocarbon emission becomes weaker relative to the aromatic hydrocarbon emission with the distance from the central star at 600 to 1300 AU. The spatial variation is well reproduced by the spectra of thermally annealed carbon dust analog synthesized in a laboratory. We also investigate spatial extent of hydrocarbon dust in IRAS 04296+3429 and IRAS 05341+0852 with diffraction-limited spectral imagery. We find optically-thick hydrocarbon emission features concentrated in the central 120 mas of IRAS 04296+3429. The hydrocarbon dust emission is not spatially resolved in IRAS 05341+0852. We suggest that there may be a systematic evolution in the chemical property of hydrocarbon dust tied up to the physical development of proto-planetary nebulae.
