The physical characteristics of the circumstellar environments of evolved stars are such that thermal infrared is the most suited for their study. The minimal angular resolution required needs diameters of telescopes up to a few tens of meters; one has therefore to use interferometers. Thermal background is a specific problem at those wavelengthes, and the classical visibility estimators in optical interferometry have to be adapted. This work establishes the constraints that are imposed on the background estimation in optical interferometry, then proposes new methods of subtraction or partial correction adapted to the estimators foreseen for the 10µm instrument MIDI of the VLTI. I then give a practical application example of those techniques, with the results obtained in the L band with the TISIS instrument on IOTA, concerning a few mira and semi-regular stars.
