We present a pedagogic discussion on the role of novel phases of dense
baryonic matter in ``neutron'' stars. Qualitative aspects of the physics that
drives phase transitions and some of its astrophysical consequences are
discussed. Observable aspects of neutron star structure and early evolution of
the newly born neutron star are discussed in some detail.
