Precise probes of hadron spin and flavor structure can be fashioned from our understanding of deep inelastic processes in QCD. Experiments at most major accelerator centers are using deep inelastic and closely related elastic probes to extract quark, antiquark and gluon helicity distributions in nucleon or few-nucleon targets. I will review the theoretical basis of the field, focusing on still problematic areas. I will emphasize connection between theoretical issues and experimental opportunities.
