Containerless processing techniques, used both in the ground laboratory and in a space microgravity environment, allow diagnostic access to the metastable state of an undercooled melt. This is demonstrated using three examples of laboratory results, namely the observation of dendritic growth velocities, the experimental verification of metastable extensions to phase diagrams, and the measurement of viscosity in the metastable regime of undercooling. The limitations for such experiments under Earth gravity are discussed and an instrument for experiments in space is described.
