Under certain circumstances that are mainly determined by the opacity, accretion disks in stellar systems may turn unstable. We discuss the influence of the water molecule on the stability of accretion disks in FU Ori-type stars. Furthermore, we present results of numerical models that indicate that the emerging instability is capable of changing its own environment in a non-reversible way such that the short- and long-term evolution of FU Ori-accretion disks may be governed by this instability and its self-regulatory capability.
