The modification of the quantum state of electromagnetic fields in the presence of matter yields fascinating effects such as the Casimir effect and the Lamb shift. Here we consider another aspect of such interaction: the entanglement of the matter and radiation as measured by the von-Neumann entropy of field. Indeed, in the presence of a dissipative medium, the electromagnetic field cannot be described as a pure state anymore. In particular, we find that the plasma and Drude models of dielectrics correspond to very different entanglement behavior. We present a formula for the "Casimir" entanglement entropy, i.e. the distance dependence of the field entropy. Finally, we study a toy model of the interaction between two plates. In this model the field entanglement entropy is divergent, however, as in the Casimir effect, its distance dependent part is finite.
