From a cappuccino in a Seattle coffee shop to the small- and large-scale structure of the universe, foam, bubbles and their patterns are widespread in nature and science -- and in human culture, from the birth of the goddess Athena, to artistic usage, to pleasing food and drink. [1] I’ll present the human and the scientific sides of foam and survey current research, including Seattle-based efforts, to understand and apply its special dynamic and structural properties. 1.
