Model atmospheres for cool giant stars are usually computed with detailed equation of state and opacity calculations that include many molecular species. We show that models of oxygen-rich stars with effective temperatures below 3000 K must also include dust grains. The effects of dust condensation in the equation of state and on the opacity must be included to obtain accurate temperature structures and spectra.
