The responses of different neutrino detectors to the signal expected from a gravitational stellar collapse in our Galaxy are analysed and compared in this paper. Energetic and temporal characteristics of the detected neutrino signal are studied in order to investigate their information content concerning the stellar collapse and neutrino properties. Some consequences on ν physics and astrophysics are discussed.
