One of the fundamental key questions still open in astroparticle physics is the nature of neutrino mass: are neutrinos Dirac or Majorana particles? Double Beta Deacy experiments are the only way known to give an answer to this question. In this paper after an introduction to the bolometric technique, the Cuoricino and CUORE experiments will be discussed.
