The recent and rapid progress on the study of the rich molecular content of bipolar molecular outflows is reviewed. Although the main physical parameters of outflows are traditionally obtained from CO lines, new observations of water and of more complex molecules throw new light on the ejecta properties. The increasing observational evidence for the presence of a warm molecular component in many outflows is discussed together with its physical implications. The chemical segregation observed in some outflows ejected from Class 0 objects is also discussed. Such chemical differenciation turns out to be of paramount importance to characterize the primary
highly collimated molecular jets emanating from very young protostars.
