With the capabilities of the International X-ray Observatory (IXO), we will have the unique opportunity of experimentally determining the fundamental properties of matter under extreme conditions. One such attribute is the behavior of matter at supranuclear densities and zero temperature. We describe how coupled time variability and spectroscopic studies of neutron stars with IXO can give us, for instance, the Equation of State at high density, by measuring the mass-radius relation for neutron stars.
