It is pointed out that many models which capture essential features of a putative quantum field theory of gravity fail to yield unitarily implementable dynamics. These models include: a free quantum field in Minkowski space in the ``parametrized field theory'' formalism [1], free quantum fields in curved spacetime [2], and inhomogeneous quantum cosmology [3]. The failure of unitarity is an ultraviolet effect and is a direct consequence of the infinite number of degrees of freedom contained in these models. Nevertheless, it is shown that the basic observables of these models appear to be perfectly well defined for all time and admit the usual probability interpretation. [1] C. Torre and M.
