The history and timescale of the conversion of gas into stars within galaxies define their evolution through cosmic time. HI-selected surveys of galaxies in the local universe, in combination with optical and infrared observations provide important pieces of information on the gaseous, stellar, and star-forming properties of galaxies. I present here an overview of some of the past, current and future work on stars and star-formation in HI-selected systems.
