Einstein Observatory gave the first hope for detecting the radiation directly from the neutron star surface. ROSAT detected such radiation from at least four pulsars. With successful launch of Chandra and XMM-Newton combined with the lower-energy band (EUV, UV and optical) observations, we expect more of these detections and better determination of surface temperature and composition of these and more neutron stars. Here we demonstrate that careful comparison of neutron star thermal evolution theories with these observations will finally make it possible to distinguish among various competing theories. That will help us obtain better insight into the properties of dense matter, for instance, by finding whether the central core of observed neutron stars consists of nucleons, pions, or kaons. That will also help us determine the degree of superfluidity of these particles, the equation of state and stellar radius. .
