VHE (very high energy; E > 100 GeV) gamma-ray observations of blazars are a valuable tool for measuring the density of the extragalactic background light (EBL) in the universe; primarily in the optical to IR bands. VERITAS, an array of four imaging atmospheric Cherenkov telescopes located in southern Arizona, is currently the most sensitive VHE observatory in the world. Its observations of distant, hard-spectrum blazars probe universal galaxy formation since decoupling. In 2009, VERITAS was used to make deep observations of the hard-spectrum VHE blazar 1ES 0229+200 (z=0.139), and to discover emission from most distant (z=0.341) VHE-emitting BL Lac object 1ES 0502+675. Given their relatively distant redshifts, the VHE spectra of these blazars are ideally suited for performing detailed EBL studies. Results from VERITAS observations of distant VHE blazars will be presented.
