This paper assesses the feasibility of detecting stellar surface granulation features upon red giant and supergiant stars by the use of speckle-imaging techniques. In particular, we propose a method for testing the statistical significance of apparent asymmetries within image reconstructions of a stellar disc, by use of comparative simulated observations of a null-hypothesis test case. From simulated speckle data and spotted star models, an expression has been derived that allows the estimation of the minimum number of speckle images required for an image reconstruction to have a reasonable chance of obtaining a statistically significant detection of a granulation feature of a particular brightness, for a given set of seeing conditions. Exploratory studies have been performed for the case of speckle imaging Alpha Orionis with 8-m class instruments, and a companion paper applies the method to observations obtained with the 4.2-m William Herschel Telescope.
