Equation of state (EOS) tables used to calculate the composition of stellar interiors are examined in terms of accuracy by comparing traditional results with those from a method that accounts for the effects of interpolation. Calculations from red-giant evolution and the zero-age main sequence are based on EOS spacings by several authors and suggest that coarse spacings generate a shift in the H-R diagram. The systematic errors can lead to acute imprecision in the calculation of the mixing-length parameter of giant-branch evolutionary tracks. Effective calculations of gross stellar properties can be achieved by employing the 'additive volume' composition-interpolation method. The results suggest the optimal fineness of the spacings in EOS tables so that only errors of an acceptable nature are generated.
