Advances in observational astronomy combined with the commissioning of new experimental facilities will open new vistas into the equation of state of nuclear matter. Approved experiments that aim to measure fundamental ground state properties of neutron-rich nuclei---such as neutron radii---will provide much needed information on the poorly known density dependence of the symmetry energy. I will discuss how these measurements, when combined with astronomical observations, will significantly improve our knowledge of the equation of state at supernuclear densities and how this knowledge will impact on core collapse supernovae and neutron stars. Further, neutron-rich matter at subnuclear densities---present in core-collapse supernovae and the crust of neutron stars---displays fascinating complex structures, such as spherical, slablike, and rodlike shapes. I will report on calculations of coherent neutrino scattering from this ``nuclear pasta'' that is expected to dominate the neutrino opacity.
