We will present Chandra and XMM-Newton observations of several neutron star X-ray transients in their quiescent state, including KS 1731-260, MXB 1659-298, the transient in Terzan 1, and the "bursting pulsar" GRO J1744-28. The quiescent emission mechanisms for neutron stars, and models used to describe their spectra, are presently being debated intensely. If the quiescent emission of these neutron star systems is due to the cooling of the neutron star, our results indicate that these sources have either been quiescent for several hundreds of years, or that enhanced neutrino cooling occurs in their neutron star cores. In the former case, the population of quiescent neutron star binaries present in the galaxy may be much larger than previously thought. In the latter case, neutrino cooling may provide a means of estimating the properties of neutron star matter.
