We present optical high and low-resolution spectroscopy and U BV R photometry of the symbiotic prototype Z And from its recent 2000-03 outburst. Our spectra revealed a high-velocity mass-outflow from the star. Structure of the [O III] 5007 profile and a cascade profile of the light curve (LC) on the rise to the maximum suggest a multiple mass-ejection by the hot component of Z And. Our models of the SED confirmed this type of activity.
