The concept of adiabatic index, measuring the stiffness of the equation of state for adiabatic systems, and which plays a fundamental role in the study of gravitational collapse, is extended to systems emitting and/or absorbing energy. In the light of the new definition, the collapse of two models of radiating, general relativistic spheres is analyzed in detail, at different regimes of radiation transport. The conspicuous role played by the new variable is clearly exhibited.
