We discuss over a year's worth of IR photometry and optical spectroscopy of Nova Cen 1991 (V868 Cen) and Nova Sco 1992 (V992 Sco), two classical novae with strong dust formation and evidence of clumpy ejecta. Classical novae typically come in three varieties with regards to dust formation: those producing optically thick dust shells, optically thin dust shells, and no dust at all. Our understanding of grain formation is incomplete, given the harsh environment a nova shell presents for dust formation. We present new models utilizing clumpy dust shells to follow grain formation, evolution, and destruction.
