Spectroscopic methods to derive the basic stellar atmospheric parameters, effective temperature, surface gravity and metallicity, are discussed with emphasis on metal-poor F, G and K stars. These stars are of particular importance in studies of stellar evolution, nucleosynthesis of the elements and galactic evolution. Still, there are considerable uncertainties in the determination of the three atmospheric parameters hampering the solution of some key problems in astrophysics. Furthermore, there is now strong evidence that the ratio between the abundance of α-capture elements and iron, α/Fe, must be considered as a fourth independent parameter, which has significant impact on stellar interior and atmospheric structure and is of high interest in connection with studies of the chemical and dynamical evolution of the Galaxy.
