More than a dozen Key Programs on the Herschel Space Observatory address various aspects of star formation and the interstellar medium. Because of Herschel's very wide dynamic range in both flux sensitivity and spectral resolution, these programs cover the full range of luminosities of young star-forming regions and objects and a broad array of science questions. We describe highlights from many of these programs as recently reported at the ESLAB Herschel First Results Workshop. Examples include surveys of both the Galactic Plane and of a number of nearby star-forming regions to search for the very earliest stages of cloud collapse. Further examples include moderate and high-resolution spectroscopy to investigate the chemistry and physical structure of the gas and dust around young stellar objects and their evolution with time.
