On the basis of a variational principle that is a direct covariant generalization of the corresponding special-relativistic procedure, a general definition is given for a perfect fluid interacting in a torsion field in the framework of both the Einstein-Cartan and tetradic theories of gravitation. It is shown that the principal characteristic of this definition is the choice of the perfect fluid's canonical energy-momentum tensor as the sources of the gravitational field. This is substantially different from the usual general-relativistic representation of the perfect fluid's metric energy-momentum tensor as the sources of the field.
