After a brief recall of the basic principles of interferometric techniques both at visible and infrared wavelengths, the authors show from a few selected examples the contribution of these techniques in the field of the late stages of stellar evolution; indeed they provide unique constraints to model e.g.: late type evolved stars like Mira variables, protoplanetary nebulae and the supernova SN 1987A, which the authors discuss. As a conclusion, they emphasize the importance of the interferometric capabilities of the future ESO's Very Large Telescope for such astrophysical programs.
