The investigation in weightless of fluids and liquid mixtures near their gas-liquid or liquid-liquid critical points has started about 15 years ago and has led to a number of important findings. I review here the main characteristics of near-critical and supercritical fluids and the most important results obtained in Europe thanks to zero-gravity: determination of critical, universal power law behavior for the specific heat and the adsorption properties near a solid wall, a unified view of phase separation (with application to the development of biological patterns). A new, very fast, mechanism of heat transport has been discovered that has been coined "piston effect" and which illustrates how the unusual values of the thermodynamic and transport coefficients can lead to a new hydrodynamics and new industrial applications. Other aspects are concerned with the thermal and mechanical behavior of fluids under forced vibration. Future research that should greatly benefit of microgravity will be concerned with supercritical fluids nucleation and chemistry.
