This paper describes some education programs wherein students at the high school and university level can develop and integrate their science and math interests and skills by doing research with real scientific data -- measurements of the changing brightness of variable stars. I describe the objectives and structures of the programs, freely-available data (especially from the AAVSO), on-line analysis software, and some examples of results from the work of my students. The same principles and resources enable interested amateur astronomers to do useful and stimulating research by analyzing and interpreting variable star measurements, as well as making measurements -- as they have done so productively for over a century.
