Stellar astrophysics is facing a number of unresolved issues. New probes and observations have uncovered serious faults in basic aspects of the theory. Interferometry provides unique new tests and complements critically traditional techniques. In some cases it can improve our metrology and understanding of stars by orders of magnitude. We review a selection of outstanding problems and exciting developments in stellar physics. We discuss ways in which current interferometers could make a crucial difference and point to creative uses of interferometric capabilities which could allow us new insights.
