Subject of this thesis is the development of methods for the mapping of stellar surface structures, in particular the mapping of photospheric star spot distributions on active cool stars. Besides an extensive discussion of those observational phenomena that contain information on the distribution of surface structures procedures of extracting this information from the observational data are studied. Major attention is given to a method called "Doppler imaging" which enables the observer to produce detailed 2-dimensional images of the photospheres of rapidly rotating stars. The newly developed method is applied to recent observations of the rapidly rotating pre-main-sequence star AB Dor. For the first time variations of the profile shapes of neutral metal lines (Ca I and Fe I) were found for this K0 V star. These are attributable to star spots. As a comparision a Doppler image was also produced with the maximum entropy method which is in good agreement with the CLEAN reconstruction with respect to the position of surface structures.
