Herbig-Haro objects are emission-line nebulae that result from radiative shock waves formed by the interaction of a collimated supersonic stellar wind, driven by an embedded young stellar object, with the ambient molecular material out of which the star formed. This dissertation is a study of these energetic outflows using detailed spectrophotometry of the emitting gas and dynamical models of the wind/cloud interactions. Three stellar jets with prominent bow-shaped Herbig-Haro objects have been studied, with the following principal results: (1) the stellar jets all show signs of being velocity-variable (i.e., non-steady); (2) the densities in the jets are approximately 10 times the densities in the ambient environments; and (3) magnetic fields do not appear to play a major role in the dynamics of the outflows, at least in the regions of the outer bow shocks.
