The Owens Valley millimeter-wave interferometer has been used to map at high resolution (7arcsec) the molecular gas and continuum emission in the cores of NGC 2071, W49, and NGC 7538. These data and single-dish maps obtained on the FCRAO telescope are used to study the high-velocity molecular gas flows. In each of the three regions the interferometer CO maps reveal a high-velocity, bipolar outflow within 10arcsec of the central infrared sources with orientations agreeing well with those in larger scale, single-telescope maps. The masses of high-velocity gas detected by the interferometer are 0.2, 138, and 12 M_sun; in NGC 2071, W49, and NGC 7538 respectively. In NGC 7538 the data suggest the existence of a rotating disk of mass 100 - 500 M_sun; collimating the flow into the polar directions. Continuum emission at 2.7 mm was detected in all the sources; this emission coincides with the origins of the molecular gas outflows.
